Fernando will manage all issues related to the items made and the inventory used to make them. We will have a walk-in refrigerator and freezer as well as a smaller flash freezer. The dry food storage area will also be walked in to and kept pest free. Initially we will keep a predetermined amount of inventory in stock which equates to a one month need. That amount will be adjusted when the data dictates a change. Weekly inventory checks will be performed and orders will be made no more than two days after the check. This of course depends on lead time of the product needed. 4. Services

Strides have been made in providing us with sugar substitutes that not only tastes as good as the real thing but so far has not been related to causing any diseases. Chef Fernando has experimented with these sugar substitutes and has created desserts and pastries that taste no different than those made with real sugar.
He believes he can create almost any one of the goods we plan to offer with a sugar substitute and not loose taste quality. I have tasted such creations and I could make no distinction. This is an idea that the market will “eat up”. 5. 1 Industry Definition We will be loosely associated to the food and beverage industry. This is certainly a feast or famine type of industry where only the strong and smart survive. It is estimated that 50% of food establishments close within the first two years. Eventually our target market will expand to include other business that serve similar products but for one reason or another do not make the product. Marketing Plan Our plan is to initially use flyers and the local newspaper to market our business. Since we have initially targeted the local resident as our first step customer base, there is no need to pay for other forms of advertisement.
The only other form of advertisement we will use are the craft fairs that are sponsored throughout the valley and state. This has a win-win attached to the time spent at such a fair. The average cost increase is 60% which still makes us slightly higher priced on some item when compared to the competition. This is to be expected because we don’t have the buying power as they do. Business increases hiring more workers will have an affect on pricing.
If the two happen at the same time and we hire the minimum, there should continue to be and profit margin rise. The inventory used to make the product does not seem to have the price fluctuation as other commodities seem to have. Eggs are the only product the may fluctuate but it is not often. As our buying power increases we should be able to better maintain a competitive pricing structure. 6. 3 Advertising and Promotion Strategy Initially out advertising will be done through the use of flyers and buying ad space in the Arizona Republic’s and the East Valley Tribune’s food sections.
We will utilize these methods each month for the first six months while keeping track on how our customers heard about our business. After evaluation of those methods we may continue, seek other tools or curtail their use frequency. We hope word of mouth is our best advertising tool. We will also market our good at craft fairs and at gun shows. Both are inexpensive to utilize and allows us to not only market the product but make sales as well. We also will utilize discount cards for the older customers, eventually spreading it to all customers. This will be the type of card that when swiped a percentage will be deducted from the total bill.
It will also allow us to obtain customer information because an info card will be required to be filled out prior to using the card the first time. 7. Operations Fernando will head the operation part of the business. He has the knowledge to work the kitchen and had to make the product. Initially the product will only be sold in house. Inventory to make the product will be bought through local vendors who supply cooking product to other businesses. The operation is the critical factor of the whole business. It controls all aspect of the business and will consume the most man hours.
Fernando and I will be the only personnel working so we expect to devote many hours to the business as we launch the store. I will need to devote my time to running the front of the store during business hours. We expect to hire one or two part time worker within weeks of opening the doors for the first time. Items will be made fresh throughout the morning hours. The first stages of getting the business up and running will be the most critical and a point where focus can be lost. We also need to be aware of our inventory usage so we can establish a base data point. We have also planned to stay proactive in our business affairs. 7. 2 Ongoing Operations
As the business finds its stride, new workers will be hired on a part time basis. There will be a training period the will take time for the duties Fernando and I will have daily. We have established a rough training guide to help the process when the time comes. So often a business will not think of training and the issues involved until the training is needed. 7. 3 Operations Expenses Our operations expenses are the biggest outlay to date. The purchasing of equipment is the biggest cost but will help our tax liability the first few years. Inventory is our second biggest outlay and all else scoots in behind.
Soon it will be payroll that will become a major expense. We need to continue to find ways to decrease our costs without sacrificing our quality. Cost saving ideas will come as the business gets underway and is part of our Continuous Improvement Program. 8. Management Our management team consists of Fernando and I. The whole operations segment will be managed by Fernando. This includes all baking, cooking, inventory control, equipment maintenance and cleaning, and we will share the morning set up and evening cleaning duties. Jorge will be responsible for all aspects on the front of the store.
This includes the cleanliness, product displays, customer service, handling of the daily receipts and sales calls to find our outside customers. I will also handle any legal, business or personnel issue should they arise. Major decisions will not be handled by only one of us. Any issues concerning funds, people or issues that can impact any portion of the business will be discussed and dealt with as a team.
